At Cabrières we select the type of vine appropriate to the ground and soil, and which bring particular qualities to the wine for which we are renowned.



   


 Syrah
In the soil around Cabrières the Syrah grape develops a fine aroma and a rich ruby colour. It is rich in tannin and has a complex range of tastes. This variety of grape is the base for the 'Fulcrand Cabanon' and 'Estabel' red wines.

     Clairette
This is both the oldest and the most remarkable of our white wine grapes. It is luminous, well-rounded, softly fleshy with a strong fruity aroma. Used particularly for the 'Clairette du Languedoc' wine, this grape produces a dry, mellow white. It is also blended with other varieties in our 'Coteaux du Languedoc'.

     Grenache White
This is a grape which has been recently introduced, to fulfil the growing popularity of our white wines. It is a variety well-known for its character and unique aroma. Blended with the 'Clairette' grape, it is used in our 'Coteaux du Languedoc' white to help produce a balanced, well-rounded taste.

     Mourvèdre
Little used around Cabrières, the Mourvèdre is however an excellent grape for wines to be matured. The initial pressing is uninteresting, but, given its high tannin content, with time it gives character to the wine and helps to conserve it during the ageing process.

     Carignan
Disliked by some, appreciated by others, the Carignan grape is a key element in our wine-blending process. Indeed, it is the foundation of our 'Estabel' red wine.

     Grenache
This is a grape which is a mainstay of our wine production. It adds a fruity, rounded, aromatic note to our wines. The 'Fulcrand Cabanon' rosé shows off the qualities of the Grenache grape. It is also a constituent of the 'Prestige' wines.

     Cinsault
It would be impossible to produce the Cabrières rosé without the Cinsault grape. It gives a suppleness and a fresh, fleshy taste which makes our rosé wine so special.
