Historians
have documented the elaboration of red, white and
rosé wines around Cabrières since the
8th Century. With nearly 1,000 acres of vineyards, spread
over 7,500 acres of moorland, woods and hills, the vines
grow on slate scree (known as the scales of Cabrières)
and nestle at the foot of the 'Pic de Vissou' mountain
(1,440 feet).

Highly
appreciated by King Louis XIV (1638-1715) and his Court,
and thus awarded the Royal 'Appellation d'Origine Contrôlée',
the wines of Cabrières continue to be enjoyed
today. The white 'Clairette du Languedoc' has a rounded,
mineral character, whilst the rosés have a smooth,
fruity taste with a blossomy aroma.
The Syrah grape gives the red wines a smooth, full-bodied
and highly aromatic taste. The hymn of the schist
